Another delicious Sunday night dinner

Spinach salad with the citrus vinaigrette

Thai hot and sour fish soup

Methods:

Substituted with what we had--onions for shallots...zest of 2 limes and 1 lemon... vegetarian fish sauce... added zuchini... used the white fish fillets we had in the freezer...used dried shitaake mushrooms we soaked first...
We did chunks of ginger so it would be easier to avoid while consuming.

new salad vinaigrette - citrus

We discovered that the house we are living in as a citrus machine we can use. Man does it change our lives, buying 10 pounds of oranges a week at the farmers market. I will miss having a juicer when we move! Taking advantage of the machine before we move!

We made this with vegetables we had from the farmer's market--celery, onion, potatoes, carrots, one red, yellow, green pepper and kale. After the soup was done, I added Trader Joe's meatless meatballs and acini di pepe for Italian Wedding Soup.

spinach and artichoke bread budding

Experiment
Mixed these ingredients:
Lemon zest of one lemon
juice of one lemon
3 eggs
1/2 c half and half
1/2 c heavy cream
1c soy
five cups spinach
three small loafs italian bread
1/4 cup artichoke/garlic/dip
sprinkled mozzarella cheese

Results:
Either need more egg, more cheese, or less liquid next time-- ends up a little overly moist. The lemon is delightful and helps break up the richness of bread pudding. Would tweak and make again...

Another keeper

Tried this for an afternoon snack -- we had pastries for breakfast / lunch...

Methods:
I used eyeball estimates for the dressing. We have a local farmer's market that sells delicious greek yogurt from sheep's milk (lactose free). We omitted the egg yolk and kept most of the rest the same. J doesn't like garlic so I also took that one out, but would keep it in if others were coming for dinner.

We had a bag of trader joe's fresh brussel sprouts and a plate of shitake mushrooms so that is what we used...We did not have sunchokes.

I am terrible at following directions and J washed and sliced the mushrooms before the brussel sprouts. So I sauteed the mushrooms first. Then I removed them. I cooked the brussel sprouts in the skillet for about 4-5 minutes. Then I poured the mushrooms over the brussel sprouts and popped them into the oven for about 10 minutes at 450.

Results:
Definitely delicious and a keeper.

Results: This was pretty uninspiring. There was also too much liquid in the pan when turning it over. There were also too many apples and not enough caramel.

So... the miso carrot ginger was delicious. J added some water at the end. We had a slightly different kind of miso that was a bit saltier so the water helped. The dressing is also great in sandwiches.

Summer salads!

Also, speaking of wonderful, we bought some nice swordfish at Whole Foods that was on sale and reportedly responsibly caught. We used just a light mix of olive oil, scallions, Chinese hot dried red peppers, and dash of Trader Joe's coffee rub and red wine. We put it on a preheated George Forman Grill for 3 minutes. It was delightful! While the grill was still hot, we put halved zucchini on afterwards, and had set aside a couscous with smoked salt and a bit of olive oil. We had the fish and couscous and zuchini with a yogurt sauce (whole soy yogurt, scallions, fresh mint leaves). It was delicious and the whole thing took less than 15 minutes. Cornmeal pancakes

I made these tonight with a kale, grilled enoki mushroom, and apple salad with a side of grilled avocado stuffed with a lime goat cheese filling

I love these pancakes! I used stone ground fine cornmeal instead of masa harina and they came out great.

The recipe in case the link ever stops working:
  1. 3/4 cup all-purpose flour
  2. 3/4 cup masa harina (see Note)
  3. 2 tablespoons sugar
  4. 1/2 teaspoon salt
  5. 1/2 teaspoon baking powder
  6. 1/2 teaspoon baking soda
  7. 2 large eggs
  8. 2 cups buttermilk
  9. 3 tablespoons unsalted butter, melted
  1. In a large bowl, whisk the flour with the masa, sugar, salt, baking powder and baking soda. In another bowl, whisk the eggs with the buttermilk and melted butter, then whisk into the dry ingredients just until incorporated; add a tablespoon of buttermilk if the batter is very thick.
  2. Preheat a griddle and brush lightly with oil. Scoop 1/3-cup-size mounds of batter onto the griddle, allowing them to spread on their own. Cook over moderate heat until bubbles appear on the surface, about 4 minutes. Flip and cook the pancakes until they are risen and golden brown on the bottom, about 2 minutes longer. Transfer to plates and serve hot with butter and maple syrup.
NOTES Masa harina (nixtamalized corn flour) is available at supermarkets, specialty food shops and online at mexgrocer.com.

4 cups bread flour
2 tsp sugar
2 1/4 tsp yeast
1/2 cup unfed sourdough starter
2 cups 110 degree water
2 tablespoons oliv oil

and there was probably 1 extra cup of bread flour at the end

Been recently eyeing my sad neglected started in the fridge, slightly ignored due to long commutes and more glorious holiday baking. Brioche is more rewarding but a pain to make, as well as unhealthy... time perhaps to revisit sourdough
